Learning to cook without recipes

I’ve been trying to get better at cooking without relying on recipes, just going by intuition and what I have. It’s been frustrating at times, like when I accidentally over-spiced a sauce last week — who knew that just a pinch could ruin it? Anyone else on a similar journey or have tips to share on how to trust your instincts in the kitchen?

I totally get the struggle with over-spicing! One tip that’s worked for me is to start with a small base of flavors — like sautéing onions and garlic first — and then building up gradually. It helps you adjust as you go rather than committing to a heavy sauce right away.

I’ve found that keeping a few staple herbs and spices can really help. Instead of going crazy with a ton of different flavors, I like to choose one or two key ingredients for each dish. It can make things simpler and still tastes great.
